Cook the Bacon (The Crispy Component): In a nonstick skillet or well-seasoned cast iron pan, cook the diced bacon over medium heat until it is crispy and golden brown, about 6 minutes. Cooking the bacon over medium heat will prevent it from burning and allow the fat to render properly, resulting in perfectly crispy bacon. Stir the bacon occasionally to ensure even cooking.
Drain Excess Fat (The Less-Greasy Secret): Drain all but 1 tablespoon of the bacon fat from the pan. You can reserve the leftover bacon fat for another use (it adds amazing flavor to other dishes, like roasted vegetables or scrambled eggs!) or discard it. Leaving a tablespoon of bacon fat in the pan will add flavor to the fried rice.
