2 slices toast
1 x 400g tin baked beans
1 tbsp ghee
½ tsp cumin seeds
1 red onion
1 green chilli
1 tsp garam masala
¼ tsp turmeric
1–2 tsp coriander
75g Cheddar
75g Red Leicester
½ red onion (topping)
2 chillies (topping)
1 tbsp coriander (topping)
2 tsp hot sauce
Instructions
Melt the Ghee and Sauté Aromatics (The Aromatic Adventure):
Melt the ghee in a saucepan over medium heat.
Add the cumin seeds and allow them to sizzle for 30 seconds before adding the finely chopped red onions. This will release the aromatic oils from the cumin seeds and enhance their flavor.
Sauté the onions for 2 minutes, stirring occasionally, until they are softened and translucent.
Add the finely sliced green chillies and cook for 30 seconds more, stirring constantly. This will release the heat from the chillies and infuse the oil with their flavor.
Add Spices and Baked Beans (The Spice Symphony):
Lower the heat to low and add the garam masala, turmeric, fresh coriander leaves and stalks, and baked beans.
Stir well to combine all the ingredients and then simmer over a low heat for 2 minutes. This will allow the flavors to meld and deepen.
Don’t cook the beans for too long, as they will dry out. If the beans become too dry, adjust the consistency with a little bit of water.
Taste the beans and check the seasoning. Add salt or sugar if needed. I find my favorite brand of baked beans (Branston) have enough salt and sugar for my taste, but you may need to adjust the seasoning depending on the brand you use.
Toast the Bread (The Toasting Technique):
Toast the bread slices to your desired level of crispness. You can use a toaster, a grill pan, or an oven broiler.
Assemble the Toasts (The Toast Topping):
Slather the hot baked beans evenly onto the toasted bread slices.
Top the beans with finely chopped red onions, finely sliced green or red chillies, and grated Cheddar and Red Leicester cheese.
Grill the Toasts (The Grilling Glory):
Grill the toasts until the cheese has melted and turned golden brown and bubbly. You can use an oven broiler or a grill pan.
I don’t butter my toast because the beans are cooked with ghee, but feel free to spread butter on your toast prior to adding the beans if you like.
Serve Immediately (The Serving Sensation):
Slice the toasts into triangles and serve immediately. This will prevent the bread from becoming soggy and ensure the cheese is still melty and delicious.
