A comforting ground beef casserole with corn, creamy sauce, and crispy tater tots, topped with melted cheddar cheese. An easy and satisfying meal perfect for family dinners.

Ingredients

Scale
  • 1/2 pound ground beef (85/15)
  • 1 cup corn
  • 2/3 cup Condensed Cream of Mushroom Soup
  • 1 cup cheddar cheese, shredded and divided
  • 1/3 cup whole milk
  • 1/4 cup sour cream
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • ½ cup bacon, cooked and crumbled
  • 32 ounces tater tots

Instructions

  • Preheat the Oven:

    • Preheat oven to 375 degrees F. This ensures the oven is at the correct temperature for even baking, preventing uneven cooking.
  • Cook the Ground Beef:

    • In a large skillet, cook beef over medium heat until browned. Use a spatula or spoon to break up the ground beef as it cooks. Ensure the beef is cooked through and no longer pink, preventing undercooking.
  • Combine the Ingredients:

    • Add the corn, cream of mushroom soup, ½ cup cheese, milk, sour cream, onion powder, black pepper, and bacon to the skillet.
    • Mix well to combine all ingredients. Ensure the sauce is smooth and the ingredients are evenly distributed, creating a harmonious blend of flavors.
  • Assemble the Casserole:

    • In a 9×13 pan, layer the beef mixture.
    • Top with the remaining ½ cup cheese.
    • Line up the tater tots in a single layer over the cheese. This creates a crispy, golden crust, enhancing the texture.
  • Bake the Casserole:

    • Bake for 40-45 minutes uncovered.
    • The tater tots should be golden brown and the filling bubbly. Ensure the casserole is heated through, preventing undercooking.
  • Add Final Cheese Layer and Bake Again:

    • Sprinkle with remaining cheese.
    • Bake another 5 minutes, or until cheese is melted. This creates the cheesy final layer, enhancing the visual appeal.
  • Serve:

    • Remove from the oven and let cool slightly before serving. This allows the casserole to set, ensuring a firm texture.

Notes

  • Cook ground beef until all liquid is evaporated.
  • Arrange tater tots in a single layer for crispiness.
  • Cover with foil if topping browns too quickly.
  • Use a meat thermometer to ensure beef is cooked through.
