They’re perfect for beginners, and you don’t need any fancy skills or tools. Whether you’re craving a sweet treat or need a quick dessert for guests, these Apple Pie Bites are sure to satisfy.

Ingredients

Scale
  • ¼ cup packed light brown sugar
  • 1 teaspoon apple pie spice, plus an additional ¼ teaspoon for sprinkling
  • 3 tablespoons unsalted butter, melted
  • ⅓ cup chopped pecans (optional for crunch)
  • 1 small Granny Smith apple, cored and sliced into 8 slices (½-inch thick)
  • 1 (8-ounce) tube Pillsbury Original crescent rolls

Instructions

  • Preheat the Oven:
Set your oven to 375°F (190°C) and line a baking sheet with parchment paper. This will prevent the bites from sticking and ensure they bake evenly. The parchment paper also makes cleanup easier, so don’t skip this step.
  • Prepare the Apple Spice Mixture:
In a small bowl, combine the brown sugar and 1 teaspoon of apple pie spice. Mix well and set aside. This mixture is what gives the bites their signature sweet and spiced flavor. It’s also versatile—feel free to experiment with different spice ratios if you love the flavor of cinnamon or nutmeg.
  • Prepare the Apples:
Melt 3 tablespoons of unsalted butter in a small dish, and use it to toss the Granny Smith apple slices. The butter adds flavor and helps to soften the apples slightly before baking. You don’t need to cook them all the way through—just a quick toss will do. Set the apples aside to allow the butter to coat them evenly. This step will help prevent the apples from being too firm when you bite into the finished product.
  • Arrange the Crescent Rolls:
Unroll the Pillsbury crescent rolls on the prepared baking sheet, separating the dough into the triangle shapes. You should have 8 triangles in total. You can use the perforations as a guide for where to place the filling. Lay them out evenly on the baking sheet, ensuring that there’s some space between each one for even baking.
  • Add the Brown Sugar Mixture:
Evenly sprinkle the brown sugar and apple pie spice mixture over the wide part of each crescent roll triangle. This will infuse the dough with that warm, sweet flavor we associate with apple pie. Be generous with the mixture—it’s a key component of the overall flavor.
  • Add the Pecans:
If you’re using pecans, sprinkle the chopped nuts over the sugar-spiced dough. Pecans add a nice crunch, but they are entirely optional. If you prefer a nut-free version, feel free to skip this step. The nuts also provide a contrast to the soft apples, making each bite more interesting.
  • Add the Apple Slices:
Place one slice of the buttered Granny Smith apple at the wide end of each crescent roll triangle. The apple should sit nicely on the dough, making sure it’s not too thick so it cooks evenly. You want the apple to be tender, not crunchy, after baking, so make sure the slices are thin enough to soften properly.
  • Roll the Crescent Rolls:
Gently fold the sides of the crescent rolls inward, then roll the dough over the apple slice, starting from the wide end. Seal the edges tightly to ensure the apple stays enclosed in the dough. Repeat the process with the remaining apple slices and crescent roll dough. If you find it difficult to roll the dough, try using a little extra butter to help it stick.
  • Brush with Butter:
Use any remaining melted butter to brush the tops of the apple pie bites. This helps the dough turn golden and crispy while baking. The butter also enhances the flavor and gives the bites a beautiful sheen. If you don’t have enough butter left, you can always melt a bit more.
  • Add a Final Sprinkle of Spice:
Lightly sprinkle the top of each apple pie bite with a little more apple pie spice. This will enhance the aroma and flavor as the bites bake. You don’t need to go overboard—just a gentle dusting will do.
  • Bake the Bites:
Place the baking sheet in the oven and bake for 10-12 minutes, or until the crescent rolls are golden brown. You’ll know they’re done when the dough is crispy and the apple slice inside is tender. The sweet cinnamon aroma will fill your kitchen, letting you know that dessert is nearly ready.
  • Cool and Serve:
Once they’re out of the oven, let the apple pie bites cool for about 5 minutes before serving. This gives the flavors time to settle and allows them to be handled more easily. If you serve them too soon, they may be too hot to enjoy fully, and the filling could spill out.

Notes

  • If the dough is too hard to roll: This could happen if the crescent roll dough is too cold. Try letting it sit at room temperature for a few minutes before rolling. If the dough feels stiff, gently warm it in your hands to make it more pliable.
  • If the apples aren’t soft enough: If you prefer a softer apple, you can cook the apple slices in the melted butter for 2-3 minutes before assembling the bites. This will give them a head start in becoming tender while baking. You’ll want the apple slices to cook evenly but not turn mushy.
  • If the filling spills out: Make sure you seal the edges tightly. If you’re having trouble, use a little extra water or butter to help the dough stick together. If any filling leaks out, it’s not the end of the world—it will still taste great!
