  • 1 tsp baking soda
  • ¾ tsp baking powder
  • ¾ tsp salt
  • ½ tsp cinnamon
  • 1 ½ cups mashed overripe banana
  • ½ cup yogurt (or additional banana)
  • ½ cup pure maple syrup, honey, or agave
  • ⅓ cup oil (or water)
  • 2 tsp pure vanilla extract
  • Optional add-ins: chocolate chips, walnuts, coconut, etc.

Instructions

  • Prep the Pan: Grease a 9×5 inch loaf pan and line the bottom with parchment paper. This will prevent the banana bread from sticking and make it easier to remove from the pan. Greasing the sides of the pan is also a good idea.
  • Preheat the Oven: Preheat your oven to 350°F (175°C). Make sure your oven is properly calibrated for accurate baking. An oven thermometer can be helpful to ensure your oven is heating to the correct temperature.
  • Combine Ingredients: In a large bowl, stir together all the ingredients: flour, protein powder, baking soda, baking powder, salt, cinnamon, mashed bananas, yogurt (or extra banana), sweetener, oil (or water), and vanilla extract.
  • Mix Well: Mix the batter until all the ingredients are well combined. Don’t overmix, as this can make the banana bread tough. Overmixing develops the gluten in the flour, which can lead to a dense and chewy banana bread. Mix just until the wet and dry ingredients are combined.
  • Add Optional Add-ins: If using, stir in your desired add-ins, such as chocolate chips, walnuts, or coconut.
  • Pour into Pan: Pour the batter into the prepared loaf pan and smooth the top. Use a spatula or the back of a spoon to ensure the batter is evenly distributed in the pan.
